The short answer
A US gallon of honey weighs about 12 pounds (5.4 kg). Honey is roughly 44% heavier than water, which weighs 8.3 lb per gallon. The exact figure runs from about 11.8 to 12 lb, depending on how much water the honey contains and how warm it is.

Why honey is so heavy
Honey is a very concentrated sugar solution: roughly four parts sugar to one part water. Sugar packs more mass into the same space than water does, so honey has a density of about 1.42 kilograms per liter, against 1.00 for water. That works out to about 11.85 lb per US gallon, which everyone rounds to 12.
Two things move the number slightly:
- Water content. Honey is typically 17% to 18% water. Drier honey is denser and a little heavier per gallon; wetter honey is lighter.
- Temperature. Warm honey expands, so a gallon of warm honey weighs slightly less than a gallon of cold honey.
Crystallized honey weighs the same as it did when it was liquid. Crystallizing changes the texture, not the mass.
Why honey jars are sold by weight
In the United States honey is labeled by net weight, in ounces and pounds, not fluid ounces. That is the source of most kitchen confusion: an "8 oz" jar of honey is 8 ounces by weight and holds only about two thirds of a cup, while a "12 oz" bear holds exactly one cup.
Price of honey per gallon
Honey is priced by the pound, so the price of a gallon is the pound price times twelve. USDA's annual honey report put the average price US producers received in 2025 at $3.05 per pound, which makes a gallon of honey worth about $36.60.
| Honey | Per pound | Per gallon (12 lb) | 5-gallon pail (60 lb) |
|---|---|---|---|
| US average, all honey | $3.05 | $36.60 | $183 |
| North Dakota (largest producing state) | $1.89 | $22.68 | $113 |
| North Carolina (high end of the state averages) | $7.99 | $95.88 | $479 |
These are averages of what producers were paid across wholesale and direct sales. What you pay depends on where you buy: a 60 lb pail from a beekeeper or bulk supplier costs far less per pound than small jars from a supermarket, and single-flower honeys such as orange blossom or tupelo cost more than clover or wildflower. How far a gallon goes in mead
A standard mead uses about 3 lb of honey per gallon, so:
- 1 quart (3 lb) makes 1 gallon of mead, about five bottles.
- 1 gallon (12 lb) makes about 4 gallons of standard mead, or 5 gallons of a lighter, dry one at 2.4 lb per gallon.
- A 5-gallon pail (60 lb) makes about 20 gallons, roughly 100 bottles.
The honey calculator in how much honey per gallon of mead works out the exact amount for any batch size, strength and sweetness. For a first batch, the traditional mead recipe is built around a single 3 lb jar.
Frequently asked questions
How many pounds of honey are in a gallon?
About 12 pounds. A US gallon of honey weighs 11.8 to 12 lb (about 5.4 kg), depending on its water content and temperature.
How much does a 5-gallon bucket of honey weigh?
About 60 pounds of honey (27 kg), plus about two pounds for the bucket. That is why the standard bulk pail is sold as a 60 lb pail.
How much does a quart of honey weigh?
About 3 pounds (1.36 kg). A pint weighs about 1.5 lb.
How much does a cup of honey weigh?
About 12 ounces (340 g), or three quarters of a pound. A cup of water weighs about 8.3 oz, so honey is roughly 44% heavier.
How many cups are in a pound of honey?
About 1 1/3 cups. A 1 lb jar holds roughly 10.7 fluid ounces.
Why does a 12 oz honey bear hold only one cup?
Because honey is labeled by weight, not volume. Twelve ounces of honey by weight takes up 8 fluid ounces, which is one cup.
How much does a gallon of honey cost?
At the 2025 US average producer price of $3.05 per pound reported by USDA, the 12 lb in a gallon is worth about $36.60. Bulk honey costs less, and retail jars and varietal honeys cost considerably more.
How many pounds of honey per gallon of mead?
About 3 lb for a standard mead of 13% to 14% ABV, 2.5 lb for a drier one and 3.5 to 4 lb for a sweet one. One gallon of honey makes about four gallons of standard mead.
